Dr. Alejandro Marangoni, food scientist at the Ontario Agricultural College, offered insight to CBC Radio on the World Health Organization’s (WHO) call to eliminate trans fats in foods.
Marangoni discussed some of the health concerns with trans fats and discussed his own research focused on finding alternatives to trans fats in processed foods.
Marangoni is a professor in the Department of Food Science, and holds the Canada Research Chair in Food, Health and Aging. He researches the physical properties of foods, including fats and palm oil alternatives.
