Dana McCauley was interviewed in an Oct. 17 Toronto Star article talking about the growing phenomenon of plant-based restaurants.

Associate director of U of G’s New Venture Creations research office that monitors global food trends and applies food research into commercial applications, McCauley said that plant-based diets have been a growing trend for years. She said that with newer science and innovation involving alternative proteins, more people are moving toward a veggie diet. She talked about some of the science that’s been developed in recent years.

McCauley studies food industry trends and innovation.
