Prof. Alejandro Marangoni

Prof. Alejandro Marangoni, Food Science, was interviewed for a feature story that appeared in the Washington Post and Gizmodo. Feb. 8. The article looks at the challenges faced by food science researchers in the U.S., especially food innovation funding. Marangoni discussed how lack of a plan or public funding for food innovation affects research. He studies food chemistry, food processing and the physical properties of fats and oils.
