The consumption of exotic meats is poorly tracked, but Canadians are apparently eating more novel products such as wild boar, elk and game birds. Prof. Michael Von Massow, Department of Food, Agricultural and Resource Economics, says fine dining restaurants are driving this trend. Interviewed by the Canadian Press on Sept. 13 and CTV News on Sept. 15, he said restaurants are offering consumers something they cannot typically get at home.
