Food economist Dr. Andreas Boecker spoke to several CBC Radio stations about why many consumers are switching to organic produce even with the cost of food already so high.
Boecker said the organic food industry in Canada has grown steadily over the last 20 years, with many consumers choosing organic for the environmental benefits.
The chair of the Department of Food, Agricultural and Resource Economics, Boecker’s research interests include novel food and agricultural technologies, specifically consumer perception, information searching and decision-making.
