Hospitality industry researcher Dr. Bruce McAdams with the Gordon S. Lang School of Business and Economics spoke to CBC Ottawa about whether a raise in wages for restaurant servers will mean the end of tipping.
McAdams said despite the fact that resentment over tipping may be at the root of many restaurant industry problems such as discrimination and the sexualization of servers, “I don’t think tipping will go away.”
A professor in the School of Hospitality, Food and Tourism Management, McAdams researches leadership and sustainable employment models in food service.
He is the director of U of G’s Sustainable Restaurant Project (UGSRP), which brings together students, researchers, and industry to discuss issues of sustainability in food service.
