The Globe and Mail spoke to Paul Uys, director (external) of the Arrell Food Institute, for a story about why investors are putting their money into pea-based food products.

The Dec. 31 article talked about how Hollywood director James Cameron is investing tens of millions of dollars to back a major organic pea-processing plant located in Saskatchewan.

Uys told the Globe and Mail that consumers have changed in recent years and “foodies” tend to be less interested in the latest and most fashionable hors d’oeuvres and more interested in knowing where their food comes from and how they can trust the food source. He also said less meat consumption has led to more demand for plant-based products.

Before joining U of G in 2013, Uys worked in senior product development and innovation at Loblaw Cos. Ltd.
