Food economist Dr. Mike von Massow explained why some consumers are reluctant to eat insect food products such as crickets to the Toronto Star.
Crickets can be intimidating for those unfamiliar with using them, von Massow said.
“We have this natural inclination to eat what we’ve always eaten and we’re less open to things we consider dirty or unpleasant,” he said.
A professor in the Department of Food, Agricultural and Resource Economics within the Ontario Agricultural College, von Massow researches retail and restaurant food demand, supply chain management, and value chain structure and performance.
