Dr. Lawrence Goodridge, a professor in the Department of Food Science, is featured in a CBC Marketplace story about E. coli outbreaks in lettuce.
In the story, Goodridge, who pursues interdisciplinary research on food-borne pathogens and holds the Leung Family Professorship in Food Safety, talks about how many outbreaks occur with bagged salads.
To reduce the risk, he said, consumers should avoid prepackaged salads and when purchasing whole heads of lettuce, should remove the outer leaves and wash the inner leaves thoroughly.
