Prof. Simon Somogyi, Arrell Chair in the Business of Food, was featured in a National Post article about the many food-related consumer changes that have emerged since the pandemic began.
Both online food delivery and sales of meal kits have surged in recent weeks, Somogyi noted.
But he added that may not last after work restrictions ease and the home cooks who emerged during quarantine find themselves pressed for time. It’s possible they may return to buying expensive convenience foods as well as meals at restaurants and fast food outlets, he said.
Somogyi studies agri-food value chain management and agribusiness marketing management and is a professor in the School of Hospitality, Food and Tourism Management.
