Prof. Keith Warriner appeared in a Global News investigation of cleanliness and food violations in Edmonton school cafeterias.

The story revealed various sanitation issues including vermin, expired food and contaminated cleaning tools.

Warriner, a professor in U of G’s Department of Food Science, said that anywhere you find unsanitary conditions, there is a risk of pathogens such as salmonella. He also said that it’s worrisome when vermin appear, because it’s generally a sign of long-term neglect.

Warriner researches food safety, food microbiology and decontamination of food products.
