DESCRIPTION:We’re diving into butchery in our upcoming session of Deep Dish Dialogues! We’ll be joined by butcher Brian Schmeler of Valeriote’s Market. Brian will be preparing a meat-based dish while we learn why cooking methods will vary depending on the cut of the meat.
